Bees roam from tree to tree collecting sweet nectar from the flowers converting this into honey back at the hive. The flavour of honey that is produced will depend on which flower’s nectar the bees have collected. Different areas have different flowering trees at different times of the year. So, the location and time of year are critical for the variety of honey that is available.

Harvested from the Yellow Box tree. It is light in colour and generally tastes sweeter than the darker honeys.
